Smith Bros. Meats requires a 25# minimum batch for all sausage products excluding Jerky & Bacon. The Jerky & Bacon is a 10# minimum batch.
Smith Bros. Meats recommends 30% of pork/beef for several of the sausage products. 17# of your wild game would be needed and 8# of pork/beef added to make a 25# batch.
For the other sausage products (excluding Bacon/Jerky) 40% of pork/beef is recommended. 15# of your wild game would be needed and 10# of pork/beef added to make a 25# batch.
Pork is our general recommendation, but beef may be substituted at an additional cost.
